Asian Noodle Salad

I was cleaning out the refrigerator and needed something to use up some ingredients.  I just threw this one together.

12 oz cooked pasta, whole grain

1/3 c. creamy peanut butter
1/4 c. hot water
juice of 2 limes
juice of 1 orange
2 T Chili garlic sauce
Whisk all ingredients together

Toss with
1 zucchini shredded
1 red pepper, thinly sliced
1 green pepper, thinly sliced
1 yellow pepper,thinly sliced
1/2 red onion, thinly sliced
2 carrots, shredded
1″ piece of ginger, grated
1 clove of garlic, minced
2 baby bok choy, thinly sliced
1 cucumber, peeled and sliced in 1/2 rounds
5 mushrooms sliced
5 green onions, sliced
Garnish with 
Basil, mint, cilantro, a squeeze of lime juice and chopped peanuts.

Eat warm or chill for later.
