Grilled Polenta Salad

We whipped this one up as an easy side dish.  It is a play on a simple salad using the polenta as sort of a “crouton”.

3 cups of water
1 cup of Yellow Polenta (Yellow Corn Meal/Grits)

Bring water an salt to a boil.  Reduce heat to a simmer.  Gradually add polenta to water and simmer until very thick.  Pour cooked mixture into a square 9×9″ baking pan and let cool.  Cut polenta into 8 slices.   Place slice on grill or non-stick griddle with a spray of olive oil to help browning and prevent sticking.  Grill until outside is crisp.  Add to plate and top with salad mixture.

1 container of herb salad mix
1 T Red Wine Vinegar
1 T First Pressed Extra Virgin Olive Oil (Optional)
1 t garlic powder
salt and pepper to taste

Mix together vinegar olive oil and garlic powder.  Toss with herb salad mix and add salt and pepper to taste.
