Happy Cinco de Mayo
Are you tired of the same old ground beef tacos in a flour tortilla? Try these budget-friendly healthy and satisfying recipes:
2 tomatoes, finely diced
1/2 red onion, finely chopped
1 garlic clove, finely chopped
juice of 1 lime
1/4 c cilantro, finely chopped
1/4 t ground cumin
1 t fresh oregano, finely chopped
1 t salt
dash of fresh ground pepper
Mix all ingredients together in a bowl and set aside in refrigerator for a minimum of 1 hour.
Mini Refried Bean Burritos with Salsa Fresca
15 oz of cooked pinto beans (I pre-cook and freeze in 15 oz portions)
1 clove garlic
1/2 to 1 whole chopped jalapeno
1 T Olive Oil
1 cup veggie stock
Salt and pepper
2 T chopped Cilantro
Salsa Fresca for serving
Saute’ onion, garlic and jalapeno in oil until soft, add veggie stock and bring to a boil. Add cooked pinto beans and reduce heat and simmer for 5 minutes. Using a potato smasher smash beans to a smooth/slightly chunky consistency. Reduce until thick. Add salt and pepper to taste. Stir in cilantro.
Heat corn tortillas. Add one Spoonful of the bean mixture to the center of the warmed tortilla. Fold the bottom up and the sides towards the center overlapping. Place burrito seam side down on plate and garnish with salsa fresca over the top.
