Potatoes with Fenugreek

In India this dish is known as Methi Aloo.  It is a fantastic side dish to spice things up.  Fenugreek is a herb with a fresh slightly bitter taste.  You can find Fenugreek or Methi at your local Indian grocer.  They may have it fresh but you may substitute frozen if needed.  If using the frozen version be sure to defrost it first and squeeze the water out of it and add it at the end of cooking time.  

1 small onion
2 garlic cloves
1″ piece of ginger
2 T peanut oil
1/2 t ground turmeric
3 medium potatoes
2 Serrano chilies
1/4 t cayenne pepper
1/2 t ground cumin
1/2 t ground coriander
3 t salt
1/2 t fresh ground black pepper
2 bunches of Fenugreek

Chop together the onion, garlic and ginger on a cutting board or in a food processor.

Heat the oil in a pan and add the onion mixture until softened.  Add the turmeric and potato, chili peppers.  Add the chili powder, cumin, coriander, salt and pepper.  Stir for one minute.

Add a dash of water to the pan to keep potatoes from sticking.  Cover and simmer until potatoes are done.  Be sure to keep checking the potatoes as they should not stick to the pan.  Add more water if necessary.  

When potatoes are tender add the fenugreek and cook for an additional 3-5 minutes until greens are heated through and wilted .
