Vegan Black Bean Flautas

I have been sick lately and very uninspired.  This is one of my “fall back” recipes when I am hungry and don’t really feel like cooking.

1 small or 1/2 of large onion chopped
1 jalapeno chopped
1 garlic clove chopped
1 Can black beans, drained and rinsed
approx 3/4 c vegetable stock
pinch of cumin
pinch of epazote
pinch of Mexican oregano
salt and pepper to taste
corn tortillas
spray oil (use pampered chef sprayer with good olive oil)

Saute onion, jalapeno and garlic in a bit of olive oil until soft.  
Add black beans and vegetable stock and bring to a boil.
Add cumin, epazote, oregano, salt and pepper.
Smash beans  to desired consistency with a potato masher (I keep some whole beans in tact)
Warm tortillas so they will fold easily
Spread some black bean mixture down the middle of the tortilla.  Roll and place seam side down on baking tray.  Repeat for as many as you would like to make.  
Spray with oil
Place under broiler until crisp.  Turn over and spray and return to broiler until lightly browned and crisp.  

Top with fresh salsa, shredded lettuce and avocado or guacamole to serve.

Sometimes I also use the bean mixture to fill tacos.  I sometimes make it extra spicy and add a serrano chili instead of a jalapeno.
